How much vanilla do I need for a given volume of extract?

In the United States, single-fold vanilla extract legally requires 13.35 ounces of vanilla beans per gallon, at no more than 25 % moisture. Above that moisture level, the required weight increases proportionally.

In the United States, vanilla extract has a standard of identity — a legal definition of what the product must contain to be sold under that name. It is set out in the Code of Federal Regulations, 21 CFR 169.175.

The standard defines a “unit weight” of vanilla beans as13.35 ounces (378 g) of beans containing no more than 25 % moisture. One unit weight per gallon of extract is single-fold, or “1X”. This is not a recommendation or a house recipe: below it, the product cannot legally be called vanilla extract in the US.

Why your actual moisture changes the number

The 25 % ceiling in the definition exists precisely because water carries no flavour. If your beans are wetter, you need more of them by weight to deliver the same quantity of dry bean matter.

required weight = 378 g × (0.75 ÷ (1 − your moisture))

0.75 is the dry fraction at the reference 25 % moisture.

This is also the practical reason extract producers buyGrade B rather than Grade A: drier beans mean less weight purchased for the same output.

Two-fold, three-fold and beyond

Fold is simply a multiple of the unit weight. Two-fold extract uses twice the beans for the same volume of finished extract, three-fold three times, and so on. The arithmetic is linear; the extraction efficiency is not, which is why high-fold production usually involves recirculation or percolation rather than a single static maceration.

For procurement purposes, though, the linear figure is the one to budget with: a two-fold run at 20 % moisture needs about 188 kg of beans per 1,000 L.

The European situation is different

There is no EU equivalent to the US standard of identity for vanilla extract. European rules govern flavourings and what may be labelled as natural, but they do not fix a bean-to-litre ratio. Formulations therefore vary between manufacturers, and specifications are set contractually rather than by regulation.

In practice, most European producers work to ratios comparable to the US single-fold standard, because that is what the market recognises — but if you are exporting into the US, the legal figure is the one that binds.

Turning a yield calculation into an order

Three steps, and the third is the one buyers most often skip:

  1. Take your annual extract volume and apply the table above at your target fold.
  2. Add a margin for extraction losses and for spent-bean handling — the spent beans retain resale value, which is worth accounting for rather than discarding.
  3. Specify moisture in the purchase order itself. Without it, your yield calculation is a hypothesis: a delivery at 32 % moisture when you budgeted 20 % puts you roughly 13 % short on dry matter, and you will discover it in production rather than at goods-in.

What happens if my beans are above 25 % moisture?

The required weight increases proportionally, so that the amount of dry bean matter stays the same. Beans at 30 % moisture require about 7 % more weight than beans at 25 %.

Does the European Union have the same rule?

No. EU law regulates what may be called natural vanilla flavouring but does not impose a single bean-per-litre ratio equivalent to the US standard of identity, so formulations vary by manufacturer.
